Grandma Knoodle’s Date Pinwheels Recipe

Cookie Dough:

1 ¼ c Flour
¼ tsp soda
½ tsp salt
¼ c brown sugar packed
½ c butter or margarine
¼ c granulated sugar
1 egg
½ tsp vanilla

Date Filling:
½ lb of whole fresh dates or 7 ¼ oz of packaged pitted dates
1/3 c water
¼ c sugar
½ c of fine cut nuts
2 tsp of lemon juice
½ tsp grated lemon rind

Dough:

Sift flour, soda and salt together.   Cream soft butter until shiny, add sugars and cream well.  Beat in egg until fluffy, stir in vanilla.  Flour and mix until smooth.   Cover and place in refrigerator while preparing filling.

Filling:

Place finely cut dates in one quart sauce pan, add water and sugar.    Cook over moderate heat, stirring to a thick paste, (3 or 4 minutes).  Cool to luke warm then stir in nuts, lemon juice and rind.  Roll dough to a 10x14 inch rectangle, on a lightly floured pastry cloth.  Spread date filling carefully over dough.  Roll jelly roll fashion and place in wax paper.   Store in refrigerator until very firm.  Slice about 3/16 in thick and bake for seven minutes until golden brown.  Do not over bake.   Makes 3 dozen.

Grease baking sheet, start oven 10 minutes before baking set at 400 degrees.
